01. APPROVF RI~STAURANT LEASE
Andy told the Commission staff had been negotiating for the past several months
with Beverly Heinze to operate the restaurant at the Airport. The restaurant will go
by the name "Bev's Buffalo GdlF. Bev has been working on a vadety of things
such as unit pdcing for the menu and locating inventory to open.
The Airport will purchase some restaurant equipment, some as a replacement due
to age and some to provide for her operation. The final inventory list will be
completed when she opens.
Bev has a partner who will offer financial backing and that will also sign the lease.
Ted Goodmann mentioned the partner is a client of her husband's insurance
company but she had checked with the City legal department and there is no
conflict of interest in her voting.
Bob Boleyn has been working with Bev and the health department to make sure
that everything meets code. The Commission asked some questions on her

background, plans for catering and hours. Bev's menu will include buffalo
hamburgers and hot dogs, as well as other meat products. She told the
Commission that buffalo was healthy meat with little fat content. The Commission
believed this item might bring interest to the restaurant.
John Markham made a moved to approve the lease as stated. This motion was
seconded by Doug Brotherton. AYES: All. NAYS: None.
The target date for the restaurant to open is November 11, 2002. This will have to
appear on the City Council agenda, after that she can apply for a liquor license
which takes about 30 days; so she will not be serving liquor when the restaurant
opens
Doug Brotherton moved to adjoum the meeting; this was seconded by Teri
Goodmann. AYES: All. NAYS: None. Meeting adjourned at 5:45 p.m.
